Plus, when stored in an airtight container or under refrigeration, these mushrooms can keep for months or even years, unlike fresh oyster mushrooms, which spoil quickly. If you are rehydrating these dried oyster mushrooms, gently rinse them with tap water to remove any impurities, then add them to a bowl and cover them with warm water. Allow the mushrooms to rehydrate in the warm water until they are soft and springy, approximately 20 minutes. Once they are fully rehydrated, give these mushrooms a squeeze to remove the excess water, then use as desired!
